Natural sesame are original form of
sesame seeds in which they are found from the plants. Usually they go through
different stages of processing for their varied uses. The plant from which
these seeds are obtained are called Sesamum Indicum. This is apt for
consumption by human being. Even after being processed, they retain their main
characteristics- rich in oil and protein. Natural or original sesame are white,
black or beige in colour. The black sesame seeds are richer in flavour and
aroma compared to beige and white varieties. Natural sesame seeds are toasted,
roasted or hulled to enhance their shelf lives.
It is quite obvious that sesame
seeds have their highest nutrition content when they are in their natural
state. For per tablespoon of unhulled natural sesame seeds, you get 88
milligram of calcium. This means that a cup full of whole milk has less calcium
content than a quarter cup of whole sesame. Another problem is while milk is
acidic thus causes lactose intolerance in many, sesame are alkaline. This is a
good source of minerals for vegans. Regular intake of natural sesame seeds are
good for women post thirty as they tend to lose calcium after this age.
The calcium content reduces when the
hull is removed. Though calcium found in these hulls are not completely
absorbable. There is a debate regarding the best form of sesame-natural or
processed because natural sesame do not break down as it should for proper
digestion. On the contrary, when these sesame seeds are crushed for sesame
butter or tahini, they become easy to digest. The seeds that you notice in your
breads, hamburger buns or rolls are usually natural ones. These natural sesame
are also used in popular Asian dishes like stir fried vegetables, steamed
broccoli, chilli chicken etc. It is these raw sesame seeds which give that
crunch to your favourite Asian cuisine.
Natural sesame of all kinds- white,
golden yellow or beige and black are high in mineral content. Though not much
difference is made when they are hulled. In fact, toasting or roasting these
seeds are good. So, processed or not, sesame seeds are healthy and tasty.
